Is it worth it to list multiple keyword phrases within one keyword phrase in the keyword metatag? For example, say I list "search engine optimization" as a keyword, but "search engine" and "engine optimization" are also searched frequently. It is recommended to put all three phrases in my keyword metatag? Or will that be considered keyword stuffing?

There is no good reason to put your keywords/phrases in the "keyword metatag" at all. :)

I think putting "search engine optimization" alone will do..

Its not necessary but yes if you can do it, it will be great. You must try as much keyword variations as possible to make sure that your site gets listed.

I think it will be useful for you to put "search engine" and "engine optimization" separately. So you'll get more chances to be found:)

No, it will not give you more chances to be found, since the "keywords" meta tag is not used by the major search engines. So - basically - it doesn't matter either way.
