I have three websites (possibly more in the future) which whilst not the exact theme are all travel websites link within my primary business.
What dangers should I watch out for if I was to link to each of the sites, so Site A linked in to site B and Site C linked to Site B but not A and Site B linked to C or A.

I doubt you will notice any negative impact from linking three web sites together.

Interesting.
Would the "weight" of the link be reduced though because of the linkage, or would this only happen if all 3 sites were on the same IP address?

I have some direct and recent experince with this. I run a network of gaming sites with a hub http://www.RPGHost.com ... the sites are all 5 or 6 ranked for google. I also run an estore at http://www.RPGShop.com and it has many different sub-domain based store fronts for affilates and other such things (like when I buy out a competitor). Anyway, I recently purchased several new domains: cheaprpg.com cheapdice.com cheapboardgame.com cheapwargame.com discountmini.com and more... They have only been under my control for about a week now. I placed a simple group of text links on the bottom of 5 or so of my most important sites and then on all the store fronts. Within a few days, Google and others were displaying first page links to these sites.
Try search "cheap dice" and I'm #3 in google after being live for only 3 days with that site. Search "rpg dice" and i'm like 12 or so after that short period of time.
I never submitted these sites to any engines and before I made the links on the other sites, they were not on the search engines at all or were far down the lists.

Hi,
I would like to make one point here.
If the new site is relatively new compare the the other sites that you planning to link with, you will definitely get the benefits out of it. But that will be a negative point for the site with higher PR as new site has NO or Less PR. But this is a recommended technic as you will get boost in your backlinks because of the other well established site.
I would say, go for it though it's a debatable issue.
