I know all about jagger but I find it odd that since we switched hosts our traffic has been in the tank. Can a web host cause this? It seems unlikely but there is a definite correlation between when we switched and our business declining.

Changing the location of a webhost can change the rankings of local results, e.g. being removed from Google.co.uk when using the UK filter for a non UK host.
Maybe the website speed was slower after you changed the host, and this will lead looss of traffic and client. Use a website speed tester to check it.
Many factors.. Far to many..
But remeber that ip's like sites have a trust rank.. e.g. if the ip your on have had spammy sites then this "may" hurt your ranking..
I've noticed some hosting companies have more trust with google thus google know that, that network is non spammy..
